Stem ginger in syrup. Where did i not look for this? For over a week i've been everywhere looking for this. I had planned to make all the cupcakes before the end of 2011(this is the last of the cupcake recipes) and just when i had given up i found it today on the last day of the year! I had to make it. I also got a new digital scale which is so much more convenient than what i'd been using before.


I actually started writing this post last year but i wasn't able to finish because my family wanted to go trafalgar square to watch the fireworks. I really would have prefered to stay home, eat, drink and blog but instead i was dragged out into the cold. I have to admit though, it was an experience. We got there at about 11:15 and it was already very crowded and all the viewing areas were closed. We got stuck watching little sparks behind really tall buildings. There were walls of police officers to stop people from going towards the already full viewing areas, anti-climb paint on poles, people shouting "lets start a riot", it was crazy! After all this, getting home was another war. After walking in the cold for almost an hour we were finally on our way back.

The stem ginger felt like gummy bears surprisingly. The whole time i didn't know what i was looking for so it was nice to finally see it. It also had a bit of grated lemon zest, ground cinnamon and ground allspice. 





I added water to the syrup from the stem ginger and boiled until reduced by one-third. Then i poured it over each cupcake once it got out of the oven. I think it was too much but i'm sure someone somewhere would like it.



I don't know what i did wrong but the frosting didn't come out right. The recipe for it was different from others and quantities were more but i thought i'd just go with it. I usually use about 25ml of milk for other frostings but for this one i used 100ml but since the icing sugar was 400g instead of the regular 250g i thought it was ok, would make too much but ok. Turns out the milk was too much and the frosting i made was way too much like i thought. I topped them with chopped stem ginger.


I'm not a fan of this one and no one else i offered was interested. The ginger taste is too strong and the bits of stem ginger chopped into the cake itself makes it harder to ignore. Its still in my fridge.

  1. it looks good but i trust i won'thave been interested myself. once i saw d jar above i knew it hadto be some konk flavour n taste.
