This Chocolate Fudge is not what i expected. I was really looking forward to a rich chocolatey treat i could reach for at the end of every day over the next week or two for a sweet end to my day. I had no idea how sweet it would actually be! It was way too sugar packed and i knew the minute i started making it.
It got me thinking of all the things we eat without really knowing what is thrown in them. Many of the processed foods we eat contain loads of sugar in different forms(sucrose, high fructose corn syrup, glucose syrup etc) and they are all really not good for us especially in excess.
This recipe was really easy. All the ingredients(except the butter and vanilla) went into a saucepan and boiled for about thirty minutes.
As it boiled, it thickened and reduced significantly. To know if it was ready to take off the heat, i had to do the soft ball test. You put a drop of the mixture in a cup of ice cold water and if it forms a soft ball then it's ready to take off the heat. If it dissolves into the water then it's not ready yet.
I took it off the heat and stirred in the butter and vanilla immediately then cooled to a lukewarm temperature. With a wooden spoon, i beat the mixture until it lost its gloss and became really thick then i put it in a buttered baking tin and left to cool completely before cutting into cubes.
