HOW TO MAKE FRIED CHICKEN

900g chicken (i got drumsticks)
250ml/1 cup of lemon juice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
115g/1 cup plain flour
475ml/2 cups vegetable oil


Place the pieces of chicken in a big bowl and pour in the lemon juice. Cover and put in the refridgerator for an hour. Rinse, dry and season with salt and pepper then dredge the chicken in flour.



In a large heavy-based saucepan, heat oil, add flour dredged chicken pieces and cover. 


Fry on high heat until brown on both sides then reduce heat to low-medium, cover and cook for 30 minutes. Remove from heat, drain on paper towels. Serve hot.
