Pineapple upside down cake is a popular American cake i've never tried. I knew i'd love it even before i tasted it, even the process was really delicious. 

I mixed up a simple butter, sugar, eggs, flour batter with the brown sugar being the star of the show and as you know, brown sugar is the best kind. Pineapples are one of my favourite fruits and for me, baked fruit is always a good idea. Processed cherries on the other hand are not my favourite flavour but maraschino cherries were in the recipe so i put them in and they worked really well with all the other ingredients. 



I crushed up the pineapples and mixed with some butter and delicious brown sugar and scooped the mixture over halved cherries in a greased muffin pan and then the batter over that.



The air smelt delicious as they baked and its a good thing they didn't take too long to bake because i could hardly wait to dig right into them. I turned out these little moist golden brown cakes with a pop of red and had one right away. They were fruity and succulent on the top(former bottom) and the batter that had risen out of the pan gave it a little crisp on the bottom(former top). Love it! Definitely a new favourite.
