As some of you may have noticed, i love pancakes. I can put almost anything in my pancake batter and its always accepting and gets along with everything. 


Christmas is an exciting time for a baker. May be the busiest time of the year but its hard to complain when its so delicious. There's a permanent sweet smell in my home of traditional fruit cake and it's a great job to wake up to. Once again, my three favourite ingredients collaborate to create this masterpiece of the season - brown sugar, fruit and alcohol! Can it get any better? 

This morning, I made my regular pancake batter and while i was frying them i knew i didn't want to eat plain old pancakes so i stole some of the mixed fruit soaked in brandy from the fruit cake stash.



I mixed it into the batter with a bit of the brandy it had been soaking in and carried on frying. Topped with butter, a sprinkle of brown sugar and honey, it was a yummy christmasy boozy breakfast.
